Whoopie Pie Ingredients/Measurements

6 T. shortening
1 cup sugar
1 egg
1 cup milk
1 t. vanilla extract
2 cups flour
1 1/2 t. baking soda
1/4 t. salt
5 T. cocoa powder

(if doubled)

3/4 cups shortening
2 cups sugar
2 eggs
2 cups milk
2 t. vanilla
4 cups flour
1 T. baking soda
1/2 t. salt
10 T. cocoa powder

Filling Ingredients/Measurements

3/4 cups confectionary sugar
3/4 cups shortening
6 T. marshmallow fluff
1 t. vanilla extract

(If you doubled the whoopie pie recipe, triple the filling recipe)

2 1/4 cups confectionary sugar
2 1/4 cups shortening
1 1/4 cups marshmallow fluff
1 T. vanilla extract

Filling Directions

Whip sugar and shortening until smooth. Then add fluff. After that, add the vanilla.

Directions

Preheat oven to 350 degrees Fahrenheit. Cream together your shortening, sugar, and egg. Then add flour, baking soda, salt, and cocoa powder. After that is mixed in completely, stir in milk and vanilla extract. Mix this until completely smooth. Cover the baking sheet with parchment paper. Then place spoonfuls of batter on the baking sheet. Bake the whoopie pies for 8-10 minutes, or until you can tap the top of the whoopie pie and it doesn't deflate. Then take out of the oven and let cool for 8 minutes. After they are cooled, spread on filling and add the top.
